BREVARD COUNTY, FLORIDA – Indian River Honey Co. tucked in Mims, 6720 US Highway 1, opens its doors for residents to be able to go shop just in time for the holidays.
Husband and wife duo, Jayson and Nicole Ward own and operate Honey River Honey Co. locally with Joseph Brannen (Co-Director of Farming Operations) for 7 years and recently opened operations to provide honey base products for consumers.
Jayson Ward was born and raised in Titusville.
Jayson values hard work and dedication. He has been a commercial beekeeper for 15 years and his commitment to caring for bees has led to creating this family-owned and operated honey farm located on the beautiful east coast of Florida. He thrives with the knowledge that his dedication to the bees is directly helping to sustain and increase bee populations, as well as support the local crops and environment. Jayson has been a mentor to other aspiring beekeepers, and he hopes to continue spreading the knowledge for many years to come.
Nicole Ward, director of business operations, passion for honey and pollen began in a laboratory and ended on a family farm.
After graduating from Florida Tech with a degree in Biology in 2011, Nicole began working in a research laboratory studying pollen grains and their morphological characteristics. Upon completing her MBA in Project Management, her interests expanded to include not only pollen and bees, but business operations as well.

Their honey is all natural and bottled in its pure raw form. That means no pasteurizing, filtering, or processing needed. Each bottle of honey is carefully harvested and packaged to ensure that it retains all its natural health benefits and delicious flavor. It is truly the perfect blend of essential vitamins, minerals, and antioxidants. Produced locally on the east coast of Central Florida, our honey is pure and delicious.

This holiday season is the perfect time to stop in and make a personalized basket for your coworkers, loved ones or neighbors. You are able to mix and match items to make that basket personalized to each individual.
Leneah and Michelle with Space Coast Experience went in to showcase how easy it is to make these great gifts.
Orange blossom honey, wildflower honey, and gallberry honey are three popular types of honey that each offer their own unique flavor and health benefits. Orange blossom honey is produced from the nectar of orange blossoms. It has a light, sweet flavor with citrus notes. It is high in antioxidants and is often used in teas and baked goods.
Wildflower honey is produced from the nectar of various wildflowers and plants and has a complex, floral flavor. The flavor of wildflower honey can vary depending on the location and season in which it is produced. It is often used as a natural sweetener. Local wildflower honey is great to allergies.
Gallberry honey is produced from the nectar of gallberry bushes, which are native to the southeastern United States. It has a rich flavor and is high in antioxidants and anti-inflammatory compounds. Gallberry honey is often used in savory dishes and as a natural remedy for sore throats and other respiratory ailments.
