Carol Dempster Underwood, 69, of Indialantic, Florida, passed away peacefully on June 2, 2023. Carol’s parents were both involved in the early days of the space program and she graduated from Satellite High School in 1972. 

Carol Dempster Underwood: A Life Well-Lived

BREVARD COUNTY, FLORIDA – Carol Dempster Underwood, 69, of Indialantic, Florida, passed away peacefully on June 2, 2023.

She was born on March 24, 1954, in Alexandria, Virginia, to the late Bill and Joanne Dempster.

Carol’s parents were both involved in the early days of the space program. They moved to Huntsville, Alabama, to work at the Redstone Rocket Arsenal, which is where the space program started.

In 1964, Bill was offered a position with Chrysler Corporation Space Division in Cape Canaveral to work on the Gemini Program. The family relocated to Florida’s Space Coast, where Carol spent the rest of her life.

Carol graduated from Satellite High School in 1972. After graduation, she reconnected with a fellow high school classmate, Albert Underwood. They married in December 1973 and had two children, Terri Dove and Dustin. Carol was a devoted stay-at-home mom who loved her children dearly.

Carol’s passion was her love for children. From helping raise her youngest sibling, affectionately called ‘my first baby’, to her own children, grandchildren, and many nieces & nephews. She truly loved all of them and taught them how to be loving, compassionate people. She often said how blessed she was by these children, but we are the ones that were blessed by having her in our lives.

She also enjoyed the beach, gourmet food, the space program, jazz music, and spending time with her many beloved friends and family. She was a generous and kind-hearted person who always had a smile on her face.

She is survived by her devoted husband of 49 years, Albert Underwood. Their children Terri Dove Payton (Jason Hulen), and Dustin (Megan) Underwood, and grandchildren Lincoln Payton, Grady & Brenna Jo Underwood. She is also survived by her three siblings, Jeff (Patty), Terri (Jodi Burris), and Clay (Joanne) Dempster, along with many nieces and nephews.

A celebration of life service will be held on Friday, June 30th at 1 p.m. at Eastminster Presbyterian Church, located at 106 N Riverside Drive in Indialantic.

Immediately following the church service, the family invites friends to continue the celebration at the Hilton Hotel Oceanfront, located at 3003 N. Highway A1A in Indialantic.

Carol Dempster Underwood was a wonderful woman who touched many lives with her love and grace. She will be greatly missed by all who knew her. In lieu of flowers, donations may be made to Saint Jude’s Children’s Hospital or any charity of your choice.
